The chef draws his culinary inspiration from his native Colombia, creating a menu that is both friendly and refined, from the deckchairs facing the Mediterranean to the tablecloth-covered tables on the terrace with its pink waxed concrete walls. Open summer and winter, from sunny December lunches on the Côte d'Azur to summer days when you can't imagine life anywhere else but on deckchairs, Copal is one of those places with good energy, where every detail, from the scent of spices to the embodiment of the décor and a real commitment to gastronomy, is an integral part of the journey.
